Fermentation

Fermentation serves as the foundation of the brewing process, the conversion of wort into beer. Here, the yeast converts fermentable sugars created during mashing to alcohol, natural carbonation (CO2) and compounds that determine the ultimate flavor profile of the beer.

Fermentors are also called CCT’s (Cylindrical Conical Tanks), primary fermentors or unitanks, as they are used for both fermenting and lagering.

Key Features

  • Made of stainless steel 304 grade.
  • Fermentors up to 4.0m diameter are produced at the our plant. Larger tanks are fabricated on-site at the customer’s location.
  • Fermentors are individually temperature controlled through auto control valves through PLC system.
  • We design the complete tank and all tank fittings in accordance with hygienic design criteria. Equipped with accessories such as overpressure and under pressure valve,  aseptic sample valve, bunging device, Tank Top Plate with necessary fittings.
  • CIP cleaning turbines special design makes it extremely easy to use and maintain, reduces the pressure drop over the machine and gives it very good performance when it comes to cleaning of the tank.
  • PUF Insulation with bulk density of 40 ±2Kgs m3

Yeast Propagation & Storage Tanks

The high productivity of a brewery is significantly influenced by fermentation and it is based on efficient yeast management.

  • YEAST FLASK
  • YEAST PROPAGATION
  • YEAST STORAGE TANK
  • YEAST PITCHING PUMP, STERILE AIR FILTRATION SYSTEM

Key Features

  • Stainless steel vessels (1 to 3, depending on the batch size) that are equipped
with heating and cooling jacket, steam sterilization capability, closed system
     to prevent infection.
  • Tank Top Plate having safety fittings includes the vacuum relief valve, pressure relief valve, bunging device and sample valves for yeast vessels.
  • Electromagnetic flow meter cum Totaliser based Yeast pitching system.
  • Automated temperature control.
  • Automated yeast pitching system from yeast storage vessels.

Filteration

Kieselguhr Filtration System

FILTERS are characterized by horizontal filtration elements which allow a stable filtration without problems in the cake panel for stopping and restarting during filtration. The machine is formed by a AISI 304 stainless steel double unit: one composed of filtering unit; the other of a dosing tank, piping, for the pre-cake formation, filtration and cleaning

Kieselguhr Candle Filter

Completely made of stainless steel consisting of:

  • Filter vessel
  • Cover with connection for filtrate outlet
  • adjustable cone
  • Perforated filter plate
  • Lifting device.

Beer Trap System

The trap filter system is designed to capture any solid particulate which has been left behind after primary filtration or as a last critical control point upstream of filling.

Bright Beer Tank (BBT)

After completion of maturation , the beer is filtered and subsequently stored into BBT's. These vessels are structurally identical to fermentation tanks.

Key Features

  • Made of stainless steel 304 grade.

Automation Control Systems

PLC (programmable logic controller) based control system is employed by breweries in the areas of automation, information and control technology.

Automation provide the following advantages:

  • Reduce labor costs
  • Better data collection and reporting
      • Batch-to-batch comparisons
      • Accurate material tracking and batch tracing
      • Manually collected data can be expensive and inaccurate
  • More consistent product quality
  • Reduced energy usage
  • Ability to make changes easily
  • Better control and yield
  • Reduced batch time by increasing equipment utilization
  • Monitor and record variable costs
  • Remote control and information available

Most Critical Measuring & Control Points:

  • Temperatures, Pressure, Level, Flow, DO, Control Valves
  • Raw materials supply
  • Quantities
  • Water quantities/qualities
  • Mash profile
  • Lauter tun cycle time
  • Brew kettle boil profile
  • Yeast temperatures
  • Yeast pitching
  • Fermentation temperature control
  • Batch records for data analysis
